Most of our products are vegan and do not contain milk, butter, eggs or honey. Generally, if our ingredients label does not list the ingredients, the product does not contain it. We have food safety policies and programs in place to avoid cross-contamination; but our breads are made in a facility where dairy products and eggs are used.
When shopping at our own retail stores, please don’t be shy to ask our staff about whether an item is vegan!

All Acme Bread products are made with flour that contains gluten. The only exception is the Ganache Button cookies (sold at retail locations only), which are made with Almond Flour. However, wheat flour is pervasive in our bakeries and we cannot guarantee that any product is completely gluten free.

We are currently working on that information and eventually we will be able to share it on our website. In the meantime, please reach out to us directly to ask for nutritional content of the product you are curious about. Our retail shops should have this information handy, and any bread bagged and sold in stores should also contain this information on its packaging.

Yes! We regularly offer seasonal breads and limited-edition loaves at our retail locations, including special offerings for holidays, events, and celebrations.

Unfortunately, Acme Bread does not provide or sell sourdough starter at this time.
While we don't have a recipe that is adapted to home use, fortunately, Nancy Silverton, Chad Robertson and Dan Leader, among many others, have written cookbooks which include excellent recipes and detailed home baking instructions. Additionally, there are numerous blogs from talented home bakers that include their own, often excellent, guidance and recipes.

The production times for our breads vary depending on the item, but generally speaking, most of our breads take between 18 and 40 hours from start to finish. We utilize long fermentation times in order to achieve desirable artisan bread qualities, and while our naturally fermented breads (Pain au Levain and Sourdough, for example) have the longest fermentation times, even our yeast-based doughs still undergo a long fermentation process.
-
Our bread is made without artificial preservatives, so its shelf life is relatively short. We also want to recognize that the guidelines are just our ways to enjoy our breads for longer and you may find that something else works better for you personally:
Storing Bread at Room Temperature (in a cool, dry place - not the fridge):
To maintain a texture contrast between the interior and exterior of the loaf:
Keep the loaf in its paper bag and store the paper-bagged loaf inside a plastic bag. This will keep the bread from drying out as fast, but it will soften the crust. Consume within 3 days.
To maintain the interior as soft as possible:
Wrap bread tightly in plastic wrap to minimize air exchange. Bread will stay even softer and more moist, but shelf life will be reduced. Consume within 1 day.
To maintain a crusty exterior (suggested only for naturally-leavened loaves or loaves that contain fats):
Keep bread inside a paper bag on the counter, or cover loaf loosely with a clean kitchen towel. Consume within 2 days.
Storing Bread in Freezer:
Slice bread while as fresh as possible and double bag tightly in plastic (ex: ziploc gallon freezer bags, plastic wrap, or other reused plastic bags), removing as much air as possible. Take out bread by-the-slice and toast to serve! Consume within 1 month.
Storing Bread in Fridge:
Do not store bread in the refrigerator unless recommended on product label (i.e. Pumpernickel, Multi-Grain Spelt with Seeds, Cakes need to be refrigerated).
